    Carbon dioxide, in its solid form, is colder than ice. It is so cold, in fact, that handling it without protection can cause frostbite. It does not melt, but instead dissipates into a gas that can be dangerous to breathe. This substance is called dry ice, and, when handled properly, has many useful applications.
     
    The most practical use of dry ice is to keep things cold. It can be used to flash freeze anything from biological samples to ice cream. It does not alter the taste of food, but alternatively keeps the fats in food from becoming rancid and preserves flavor over time. When transporting perishable items, even medications, dry ice can be used to insure freshness. With safety precautions, it can be used to ship food in packages, and even be brought on an airplane.
     
    Another common use of dry ice is to create 'fog'. This can be done for a special effect in a movie, or even in a haunted house or nightclub. When a piece of dry ice is placed in water, sublimation is accelerated. This is the process from which a chemical in a solid state skips over the liquid stage and turns directly into a gas. For dry ice, this process occurs more rapidly in water, allowing a dense cloud of fog to dramatically fill a room. Since carbon dioxide is heavier than air, the fog will stay low to the ground, providing an eerie special effect.
     
    Dry ice may sound enticing, and can even be obtained from your local grocery store, however, it is important to remember to follow safety precautions before and during the handling of this powerful substance. The first thing to consider is how you are going to transport and store the dry ice. It is very important to wear protective gloves while picking up dry ice. It is so cold than it can cause frostbite upon contact. If you will be driving with a large quantity of dry ice, make sure to have your windows down to allow a flow of air so carbon dioxide does not build up inside your car. Also, store dry ice in a cooler so it lasts longer, but make sure it is not airtight so it does not explode under pressure from the sublimation.
     
    As dry ice sublimates and creates 'fog', it is slowly filling the room with carbon dioxide. This is not a gas you want to breathe in large quantities. It can replace the oxygen in a room, causing illness and suffocation, so it is very important to have good ventilation in any area in which you are storing or using dry ice. Since carbon dioxide is colorless and odorless, it can be easy not to realize you are having a ventilation problem till it is too late. The absolute safest way to use dry ice is with the use of an OXYGEN METER.

    The Grand Canyon is one of America's best National Parks. And one of the best ways to see it is by helicopter. Of course, there are lots of options from which to choose, but if you follow these 5 tips you'll land the one that's best for you.
     
    Couple of quick facts before we dive in. There are two places from which to visit the Canyon: the West Rim and the South Rim. From Las Vegas, you'll visit the West by helicopter and from Tusayan, AZ, you'll see the South.
     
    South Rim Options
     
    There are NO helicopters from Las Vegas to the South Rim. It's too far. Thus if you want to do this you'll have to take an airplane ride first, land, and then do a helicopter ride at South Rim. In most cases, these trips include a 2.5-hour bus tour, too.
     
    OK, the tips. The first one I've got for you is book in advance. This is very important because flights sell out quite regularly, especially during summer. My recommendation is that you purchase your tour once you get your rooms finalized. Barring that, no less than a week from desired departure time.
     
    Right behind reservations is booking online. Folks, this is the only way to go if you want to save money. Online prices are cheaper than retail - some by up to 35 percent! However, in order to get that discount you MUST complete the transaction online. Failure to do so could result in a higher price.
     
    Flight Times
     
    Another tip is to book a mid-morning flight. Helicopter tours depart nearly every hour of the day but the best take off between 8 a. M. And 11 a. M. I like this timeframe because that's when visibility is best and you also get the smoothest air. I also like late afternoon flights and in particular sunset ones.
     
    (Quick word about sunset tours - These are very limited because they only leave once a day at a certain hour in order to be in the air as the sun sets. In all cases you will have to RSVP this one in order to do it. No exceptions.)
     
    My fourth tip is take a landing tour. For the record, most of these take off from Las Vegas and they are spectacular. My favorite is the one that goes to the bottom of the Canyon for a Champagne Picnic followed closely by another that includes a boat ride on the Colorado and full access to the Skywalk. You can't go wrong with either.
     
    However, and this is the fifth and final tip, if you pick an air-only tour, make sure to take the one that leaves from the Las Vegas Strip and includes a limousine ride to and from your hotel. Or, if you are doing an aerial from South Rim, take the 50-minute flight because you'll see up to 75 percent of the National Park.

    Regional Pairing
     
    A good start with pairing wine and cheese would be to find something that came from the same region. This is considered to be a safe bet, but often something that also pleases the palate with rich and complimenting blend of flavours.
     
    Choosing WhiteM
     
    Most people think that cheeses should be paired with reds, but it's actually white wine that tends to give cheese and wine pairing a more romantic love story of flavours. It is the lack of tannins and the acidity of white wines that perfectly complement cheeses, especially with those creamy ones.
     
    Cheese is Food too!
     
    It also helps to look at cheese as food. Of course, why wouldn't it be, you might surmise. But what I really mean here is that when pairing cheese with wine, you have to do it like you would with dishes. Light tasting cheeses go better with lighter wines. The same also goes for richer cheeses; they do well with full-bodied wines such as Pinot Gris or a white Burgundy.
     
    For the Love of Red
     
    You have to know that not all red wines can be matched with cheese. If you are one with a palate that is loyal to red wines and prefer to pair it with cheeses instead of white wines, then it is better to go with lighter reds. Tannins can be tough on cheeses, and it may even overpower its taste. So if you have to go for red wines, choose those with low tannins, such as Beaujolais or those that had enough time to age. Light and fruity wines are also recommended.
     
    Opposites Attract
     
    In some alternate universe, contrasting personalities in both wine and cheese can also make a perfect match. You can also pair softer cheese with bolder wines, and harder cheese with lighter wines. Another contrasting air would be sweet wines with cheeses with high acidity. These type of pairings complement the other. However, this does take some trial and error to pull off since you have to be familiar with the flavours first.
     
    Against All Odds
     
    You might be wondering what with everyone saying that white wines actually is a perfect pair for cheeses instead of red, and then you find Port wine and Stilton being paired? No, the wine gods are not playing a trick on you; it's just that the sweetness of port wines go perfectly well with the tangy saltiness of this English blue veined cheese or any blue cheese for that matter.
     
    Here are some wine pairings that also go perfectly well.
